The scope of food microbiology, microbes and food materials.
Factors affecting the growth and survival of microbes in food (substrate and environmental limitations), predictive food microbiology.
Microbiology of primary food commodities (products of animal origin and plant products): structure and compostion, spoilages, microbiology of primary processing, storage circumstances. Fermented and microbial foods.
Food microbiology and public health: foodborne illnesses, bacterial agents, non-bacterial agents, infections, poisonings (bacterial and mycotoxins).
