Aim of the subject:

To provide basic knowledge on the field of:

  Principles in food chemistry and analysis

  Determination of macro (proteins, lipids, carbohydrates), micro components, and contaminants

  Other possible components: biogenic amines, antioxidants, enzymes etc.

  Classical and modern instrumental methods of analysis

  Rapid and non-destructive methods

  Complex result evaluation of food analysis, limiting values, current regulations
